I've got that Christmas itch to cook something this weekend.

You didn't specify entree, side dish or dessert. But here is an easy dessert.

Cranberry Velvet Freeze.

32 oz wholeberry cranberry sauce.

28 oz crushed pineapple drained.

101/2 ozs miniture mashmellows.

1 cup green maraschino cherries quartered.

1 cup red maraschino cherries quartered.

1 tsp leamon juice.

3 cups heavy whipping cream, whipped.

In large bowl combine the cranberry sauce, pineapple, marshmallows, cherries and lemon juice. Fold in whipping cream.

Spoon into an ungreased 13in X 9in X 2in dish. Cover and freeze overnight. Remove from freezer 10 minutes before serving.

Serve 12-16.

No I'm not a chef. But I did stay in a Holiday Inn Express last night

Cos we've been busy blinking and baking!! Baking cookies for all my family n friends is my tradition each Christmas, on top of putting up the light display, we are running so late this year~ I still need to make another 6 different kind of cookies @ 8 dozen each~ plus 12 ginger cake, than making lables, packing, than finally shipping... I am getting more tired just thinking about it.......

fireman is right maybe in a few weeks~
